The matcha

Kaze no Shiro, first-flush matcha composed by Horii Shichimeien in Uji. Umami-rich, naturally sweet, vivid green. Shaded twenty-five days, stone-milled at forty grams an hour.

Preparation

2g Matcha, zwei gestrichene Uchi-Löffel, in 40ml Wasser bei 70°C sieben.
Mit einem Besen in W-Bewegungen schaumig schlagen. 120ml Wasser oder Milch hinzufügen.
