The matcha

Kaze no Shiro, first-flush matcha composed by Horii Shichimeien in Uji. Umami-rich, naturally sweet, vivid green. Shaded twenty-five days, stone-milled at forty grams an hour.

Preparation

Sift 2g of matcha, two leveled Uchi Spoons, into 40ml of water at 70°C.
Whisk until smooth in a W motion. Add 120ml of water or milk.
