Horii Shichimeien, our producer, is one of the few remaining Uji, Japan, houses that still tends its own garden there.
Kaze no Shiro is a first-flush matcha composed by Horii Shichimeien's tea master.
Rather than a single garden or a single cultivar, it draws first-harvest tencha from Kyoto, Nara and Shiga, weaving three varieties: Okumidori, Yabukita and Sayamakaori.

In Uji, blending is not a shortcut. It is how a house builds a flavour of its own and holds it steady, season after season, beyond any single garden or year. The leaves are shaded for twenty-five days before harvest, drawing depth, sweetness and the vivid green of a true first flush. They are then stone-milled at forty grams an hour.

Okunoyama is the last surviving farm of the seven designated in the Muromachi period as the source of Uji tea — more than six hundred years ago, and in continuous cultivation ever since. The tea house was founded in Uji in 1879.

Preparation

Sift 2g of matcha, two leveled Uchi Spoons, into 40ml of water at 70°C. Whisk until smooth in a W motion. Add 120ml of water or milk.
