Origin

Produced by Horii Shichimeien, a tea house in Uji founded in 1879. They are one of the few producers in Uji that own their own tea garden — Okunoyama, the last surviving garden of the seven famous farms designated during the Muromachi period. Over 600 years of unbroken cultivation.

Our blend, Kaze no Shiro, is a first-harvest matcha grown in Kyoto Prefecture. The leaves are shaded for over 25 days to develop depth, sweetness and a vivid green colour, then stone-milled at Horii's farm at 40 grams per hour.

Preparation

Sift 2g of matcha, two leveled Uchi Spoons, into 40ml of water at 70°C.
Whisk until smooth in a W motion. Add 120ml of water or milk.
